Gaio® tagatose provides exiting opportunities to develop the diet market by increasing palatibility of existing products

In soft drinks Gaio® tagatose induces remarkable sensory effects when blended with intense sweeteners, it speeds up sweetness onset; it reduces bitterness, and it improves mouthfeel even in small amounts. In dosage levels from 0.2% to 1%, Gaio® tagatose improves the flavor profile of most high intensity sweetened soft drinks. In our applications trials, remarkable effects were obtained with Aspartame, Acesulphame-K and Sucralose. All of the flavour effects of Gaio® tagatose were universially beneficial.

Gaio® tagatose enhances specific flavours in various application systems. It enhances Mint and Lemon flavour in sugar free chewing gum and mints. Gaio® tagatose Prolongs the sweetness in diet chewing gum. Additionally, Gaio® tagatose enhances creaminess and toffee flavour.

The flavour benefits from using Gaio® tagatose in combination with high intensity sweeteners can also be exploited in diet yogurts or table top formulations.

Use of Gaio® tagatose as a flavour enhancer in small doses allows claims in the US such as:

  1. Sugar free – max 0.5 g Gaio® tagatose can be used per serving
  2. Zero Calories – max 5 kcal/serving = 3.33 g of Gaio® tagatose
